Soy Dijon Chicken Thighs with Sweet Potatoes

Ingredients

The marinade

  • ¼ cup Dijon mustard
  • ¼ cup soy sauce
  • 2 Tbsp vegetable oil
  • 2 Tbsp brown sugar
  • 2 cloves garlic, minced
  • to taste freshly cracked pepper

The main ingredients

  • 2 lbs chicken thighs (8 pieces)
  • 1 medium sweet potato (1 lb.)

Instructions

  1. 1. Prepare the marinade by mixing Dijon mustard, soy sauce, vegetable oil, brown sugar, minced garlic, and pepper in a bowl.
  2. 2. Add chicken thighs to a zip-top bag or dish and pour the marinade over them. Refrigerate for at least 30 minutes.
  3. 3. Preheat the oven to 375°F.
  4. 4. Peel and cube the sweet potato into ¾ inch pieces and place them in a casserole dish.
  5. 5. Lay the marinated chicken thighs over the sweet potatoes and pour the remaining marinade on top.
  6. 6. Cover the dish with foil and roast for 45 minutes, removing the foil after 30 minutes to brown the top.
  7. 7. Spoon some of the juices from the dish over the chicken before serving.
