Soy Dijon Chicken Thighs with Sweet Potatoes

Instructions
- 1. Prepare the marinade by mixing Dijon mustard, soy sauce, vegetable oil, brown sugar, minced garlic, and pepper in a bowl.
- 2. Add chicken thighs to a zip-top bag or dish and pour the marinade over them. Refrigerate for at least 30 minutes.
- 3. Preheat the oven to 375°F.
- 4. Peel and cube the sweet potato into ¾ inch pieces and place them in a casserole dish.
- 5. Lay the marinated chicken thighs over the sweet potatoes and pour the remaining marinade on top.
- 6. Cover the dish with foil and roast for 45 minutes, removing the foil after 30 minutes to brown the top.
- 7. Spoon some of the juices from the dish over the chicken before serving.
