One Pan Oven Baked Fish and Tomatoes

Ingredients

The fish and vegetables

  • 2 cups baby tomatoes
  • 4 cloves garlic
  • 2 small shallots, sliced thin
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tbsp olive oil
  • 1 large (or 2 small) filets fresh trout

The herb sauce

  • ¼ cup packed fresh basil
  • ¼ cup packed fresh cilantro
  • 1 zest from one lemon
  • ½ cup olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Garnishes

  • to taste fresh basil
  • to taste lemon wedges

Instructions

  1. Preheat the oven to 400°F.
  2. Combine baby tomatoes, olive oil, garlic, shallots, salt, and pepper on a parchment-lined baking sheet and roast for 15-20 minutes until tomatoes soften.
  3. Add the trout filets to the pan, season with salt and pepper, and bake for an additional 8-12 minutes until the fish flakes easily.
  4. Prepare the herb sauce by muddling or blending the basil, cilantro, lemon zest, olive oil, salt, and pepper until combined.
  5. Once the trout is done, serve it topped with the roasted tomatoes, squished garlic, and drizzle with the herb sauce.
