Instructions
- Preheat the oven to 400°F.
- Combine baby tomatoes, olive oil, garlic, shallots, salt, and pepper on a parchment-lined baking sheet and roast for 15-20 minutes until tomatoes soften.
- Add the trout filets to the pan, season with salt and pepper, and bake for an additional 8-12 minutes until the fish flakes easily.
- Prepare the herb sauce by muddling or blending the basil, cilantro, lemon zest, olive oil, salt, and pepper until combined.
- Once the trout is done, serve it topped with the roasted tomatoes, squished garlic, and drizzle with the herb sauce.
