Baked Tilapia

Ingredients

The vegetables

  • 2 pieces tomatoes, chopped into 1 inch pieces
  • 1 piece bell pepper, cut into 1 inch pieces
  • ½ piece small-medium zucchini, cut into quarters
  • 1 small red onion, sliced thin
  • 10 pieces baby potatoes, quartered
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper

The fish

  • 4 filets BAP certified tilapia

The Greek dressing

  • ½ cup olive oil
  • ½ tablespoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 piece juice of one lemon
  • ½ tablespoon red wine vinegar
  • 2 small cloves garlic, pressed

The toppings

  • ½ cup crumbled feta cheese
  • cup diced mixed olives
  • to taste tzatziki for serving

Instructions

  1. Preheat the oven to 400°F.
  2. On a parchment-lined baking sheet, combine chopped tomatoes, sliced bell pepper, zucchini, onion, baby potatoes, garlic, olive oil, salt, and pepper. Toss to coat and roast for 18-20 minutes until the potatoes are tender.
  3. Remove from the oven and place the tilapia filets on top of the vegetables. Drizzle Greek dressing over the filets, reserving some for later.
  4. Return to the oven and bake for an additional 8-10 minutes until the fish flakes easily.
  5. Once done, sprinkle crumbled feta and diced olives over the dish and drizzle with the remaining dressing. Serve with tzatziki on the side.
