Baked Tilapia

The Greek dressing

red wine vinegar

crumbled feta cheese

Instructions
- Preheat the oven to 400°F.
- On a parchment-lined baking sheet, combine chopped tomatoes, sliced bell pepper, zucchini, onion, baby potatoes, garlic, olive oil, salt, and pepper. Toss to coat and roast for 18-20 minutes until the potatoes are tender.
- Remove from the oven and place the tilapia filets on top of the vegetables. Drizzle Greek dressing over the filets, reserving some for later.
- Return to the oven and bake for an additional 8-10 minutes until the fish flakes easily.
- Once done, sprinkle crumbled feta and diced olives over the dish and drizzle with the remaining dressing. Serve with tzatziki on the side.
