Ingredients

The fish

  • 1 fillet catfish

The seasonings

  • to taste salt
  • to taste ground black pepper

The vegetables

  • 1 cup cherry tomatoes
  • 1 sliced lemon
  • 4 cloves garlic
  • 2 sprigs thyme

The oil and garnish

  • 4 tablespoons olive oil
  • 2 tablespoons freshly chopped parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the fillets dry and season with salt and black pepper.
  3. Arrange the catfish in a baking dish and top with tomatoes, lemon slices, garlic, and thyme.
  4. Drizzle olive oil evenly over the top.
  5. Bake for 15 to 20 minutes, depending on the thickness of the fish.
  6. Garnish with freshly chopped parsley and serve immediately.
