Instructions
- Heat a cooking pan over medium heat and melt the butter.
- Add minced garlic and cook for 1 minute, then add cherry tomatoes and cook for another 3 minutes.
- Pour in chicken stock and white wine, then add chopped basil and remaining seasonings (except lemon zest). Cook the sauce for 10 minutes.
- Season both sides of the flounder and place it in a baking dish.
- Cover the flounder evenly with the tomato basil wine sauce.
- Bake uncovered at 350 degrees Fahrenheit for 10 minutes.
- Top the baked flounder with lemon zest and serve immediately.
