Ingredients

The flounder

  • 2 lb Flounder Fish Filet
  • 2 tsp Black Pepper
  • 3 tsp Creole Seasoning
  • 2 tbsp Parsley Flakes
  • 3 tbsp Butter
  • 1 unit Lemon (Zest)

The tomato basil sauce

  • 1 cup Cherry Tomatoes
  • 2 tbsp Minced Garlic
  • ¼ cup Fresh Chopped Basil
  • ¾ cup Chicken Stock
  • ¼ cup White Wine
  • 1 tsp Red Pepper Flakes
  • ½ tsp Garlic Powder
  • ¼ tsp Ground Ginger
  • ¼ tsp Himalayan Salt
  • Dash unit Red Cayenne Pepper

Instructions

  1. Heat a cooking pan over medium heat and melt the butter.
  2. Add minced garlic and cook for 1 minute, then add cherry tomatoes and cook for another 3 minutes.
  3. Pour in chicken stock and white wine, then add chopped basil and remaining seasonings (except lemon zest). Cook the sauce for 10 minutes.
  4. Season both sides of the flounder and place it in a baking dish.
  5. Cover the flounder evenly with the tomato basil wine sauce.
  6. Bake uncovered at 350 degrees Fahrenheit for 10 minutes.
  7. Top the baked flounder with lemon zest and serve immediately.
