Baked Haddock

Ingredients

The fish

  • 4 filets haddock (6 ounces each)
  • ½ teaspoon salt
  • ¼ teaspoon pepper

The toppings

  • 4 tablespoons olive oil
  • 1 cup cherry tomatoes
  • 1 large lemon (sliced)
  • 2 cloves garlic (sliced)
  • 2 sprigs thyme

Instructions

  1. Preheat the oven to 200C/400F and prepare a 9x13-inch baking dish.
  2. Pat dry the haddock filets and season them with salt and pepper.
  3. In a bowl, combine the tomatoes, olive oil, lemon, garlic, and thyme, then pour over the baking dish.
  4. Place the haddock filets on top of the mixture, pushing it aside.
  5. Bake for 15-17 minutes until the fish is opaque and flakes easily.
