The marinade

Instructions
- Preheat the oven to 400°F.
- Cut the fish into 6-8 pieces and mix marinade ingredients in a bowl.
- Toss the fish with the marinade and set aside.
- In a lightly oiled baking dish, layer the onion, fennel, and tomatoes.
- Drizzle with olive oil, lemon juice, and sprinkle with salt and pepper.
- Roast in the oven for 30-35 minutes, shaking halfway through.
- Nestle the fish among the vegetables, drizzle with leftover marinade, and return to the oven for 7-8 minutes or until cooked to your liking.
- Remove from the oven, squeeze with lemon, scatter with thyme, and serve.
