Baked Haddock

Ingredients

The fish

  • 1 lb Haddock (or other white fish like cod, halibut, sable or bass)

The marinade

  • tablespoon olive oil
  • 3 cloves garlic (minced)
  • 1 lemon lemon zest
  • ½ teaspoon kosher salt
  • ¼ teaspoon cracked pepper
  • 1 tablespoon thyme

The vegetables

  • ½ of a sweet onion thinly sliced
  • 1 fennel bulb very thinly sliced
  • lbs cherry, grape or baby heirloom tomatoes

Additional ingredients

  • 1 teaspoon olive oil
  • 1 lemon juice
  • pinch salt and pepper
  • Garnish with thyme sprigs

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the fish into 6-8 pieces and mix marinade ingredients in a bowl.
  3. Toss the fish with the marinade and set aside.
  4. In a lightly oiled baking dish, layer the onion, fennel, and tomatoes.
  5. Drizzle with olive oil, lemon juice, and sprinkle with salt and pepper.
  6. Roast in the oven for 30-35 minutes, shaking halfway through.
  7. Nestle the fish among the vegetables, drizzle with leftover marinade, and return to the oven for 7-8 minutes or until cooked to your liking.
  8. Remove from the oven, squeeze with lemon, scatter with thyme, and serve.
