Ingredients

The fish

  • 12 ounces flounder

The coating

  • ¼ cup Parmesan or Romano cheese, grated
  • ¼ cup panko breadcrumbs
  • 1 teaspoon garlic, finely chopped
  • ¼ teaspoon sweet paprika
  • 1 teaspoon Italian parsley, finely chopped
  • teaspoon sea salt
  • to taste black pepper
  • 1 teaspoon lemon zest

The oil and seasoning

  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • to taste sea salt
  • to taste black pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Spread 1 ½ tablespoons of olive oil on a baking sheet.
  3. In a small bowl, combine the grated cheese, breadcrumbs, minced garlic, paprika, parsley, salt, pepper, and lemon zest.
  4. Pour the mixed ingredients onto a large plate.
  5. Brush the flounder with olive oil and season with salt and pepper.
  6. Coat the flounder fillets in the breadcrumb mixture, pressing lightly for a good coating.
  7. Place the coated flounder on the oiled baking pan.
  8. Mix one tablespoon of olive oil with one teaspoon of lemon juice and brush it on the flounder.
  9. Bake in the preheated oven for 12-15 minutes until golden brown.
