Ingredients

Sauce

  • 2 tablespoons plain unsweetened yogurt
  • ½ tablespoon chopped cilantro
  • 1 teaspoon lime juice
  • ½ teaspoon agave nectar (optional)
  • ¼ teaspoon cumin
  • to taste salt and pepper

Filling

  • 1 tablespoon grapeseed oil
  • ½ cup cubed sweet potato
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • 1 cup baby spinach
  • ½ cup cooked black beans

Cereal

  • cup dry The Soulfull Project Hearty Grains & Seeds Cereal
  • 2 tablespoons chopped cilantro
  • to taste salt and pepper

Optional toppings

  • 1 fried egg
  • to taste fresh cilantro
  • to taste sliced jalapeno pepper
  • to taste chopped green onion

Instructions

  1. Prepare the sauce by whisking yogurt, cilantro, lime juice, agave nectar, cumin, and seasoning with salt and pepper.
  2. In a skillet, heat grapeseed oil and sauté sweet potato with chili powder, salt, and pepper for about 10 minutes until tender.
  3. Add baby spinach and black beans to the skillet and cook for an additional 2 minutes until the spinach wilts.
  4. While the filling cooks, boil water and salt in a saucepan, then stir in the cereal and cook for about 4 minutes.
  5. Combine the cooked cereal, bean filling, and yogurt sauce in a bowl, and add optional toppings as desired.
