Instructions
- Prepare the sauce by whisking yogurt, cilantro, lime juice, agave nectar, cumin, and seasoning with salt and pepper.
- In a skillet, heat grapeseed oil and sauté sweet potato with chili powder, salt, and pepper for about 10 minutes until tender.
- Add baby spinach and black beans to the skillet and cook for an additional 2 minutes until the spinach wilts.
- While the filling cooks, boil water and salt in a saucepan, then stir in the cereal and cook for about 4 minutes.
- Combine the cooked cereal, bean filling, and yogurt sauce in a bowl, and add optional toppings as desired.
