Ingredients

Salad Ingredients

  • 1 unit zucchini, sliced paper thin, lengthwise
  • 10 unit kalamata olives, roughly chopped
  • ½ cup chickpeas, cooked and cooled (or canned)
  • 20 g goat cheese, crumbled
  • a handful mesclun
  • 1 slice whole wheat bread, toasted and cut into 5 strips

Dressing Ingredients

  • ½ tsp olive oil
  • ½ tsp white wine vinegar
  • ½ tsp fleurs d’ail
  • ½ tsp capers
  • ¼ tsp dried oregano
  • tsp salt
  • pinch pepper
  • squeeze lemon juice

Instructions

  1. Whisk together all dressing ingredients in a medium mixing bowl.
  2. Add zucchini to the dressing and stir gently to coat.
  3. Lay mesclun on the serving plate and mound the zucchini in the center.
  4. Sprinkle chickpeas, olives, and goat cheese on top.
  5. Arrange toast strips around the salad and serve immediately.
