Zucchini and Goat Cheese Salad

Instructions
- Whisk together all dressing ingredients in a medium mixing bowl.
- Add zucchini to the dressing and stir gently to coat.
- Lay mesclun on the serving plate and mound the zucchini in the center.
- Sprinkle chickpeas, olives, and goat cheese on top.
- Arrange toast strips around the salad and serve immediately.
