Grilled Zucchini Salad

Ingredients

  • 4 small zucchini
  • 2 tablespoons olive oil
  • 2 cups grape tomatoes
  • 1 15 oz can chickpeas
  • 2 tablespoons balsamic vinegar
  • cup chopped basil
  • 3 oz crumbled goat cheese
  • to taste salt
  • to taste black pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the zucchini with 1 tablespoon of olive oil and season with salt and pepper.
  3. Grill the zucchini until charred and slightly softened, about 7-10 minutes.
  4. Remove from the grill and let cool, then chop into pieces.
  5. In a large bowl, combine the chopped zucchini, tomatoes, chickpeas, remaining olive oil, and balsamic vinegar.
  6. Toss the mixture, then add basil and goat cheese, stirring gently.
  7. Season with additional salt and black pepper to taste, then serve.
