Grilled Zucchini Salad

Ingredients

  • 3-4 medium-large zucchinis
  • generous drizzle none extra-virgin olive oil
  • generous sprinkle none salt
  • generous sprinkle none pepper
  • 2 none green onions, sliced
  • 1 clove garlic, minced
  • 2-3 tbsp chopped walnuts
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh mint, chopped
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • 3 oz soft goat cheese, crumbled

Instructions

  1. Preheat the outdoor grill to high heat.
  2. Trim the ends of the zucchinis and cut them into ¾" thick diagonal slices.
  3. Drizzle the slices with olive oil and sprinkle with salt and pepper on both sides.
  4. Grill the zucchini slices for about 2 minutes per side until softened and grill marks form.
  5. Remove the grilled slices and let them cool for a few minutes, then cut into bite-sized pieces.
  6. In a mixing bowl, combine the zucchini pieces with green onions, garlic, walnuts, parsley, mint, salt, and pepper; toss gently.
  7. Transfer the salad to a serving plate and garnish with crumbled goat cheese.
  8. Serve warm or chilled.
