Grilled Zucchini Salad

Instructions
- Preheat the outdoor grill to high heat.
- Trim the ends of the zucchinis and cut them into ¾" thick diagonal slices.
- Drizzle the slices with olive oil and sprinkle with salt and pepper on both sides.
- Grill the zucchini slices for about 2 minutes per side until softened and grill marks form.
- Remove the grilled slices and let them cool for a few minutes, then cut into bite-sized pieces.
- In a mixing bowl, combine the zucchini pieces with green onions, garlic, walnuts, parsley, mint, salt, and pepper; toss gently.
- Transfer the salad to a serving plate and garnish with crumbled goat cheese.
- Serve warm or chilled.
