Grilled Zucchini and Tomato Salad

Instructions
- 1. Preheat the grill to high flame.
- 2. Wash the zucchini and trim off the ends.
- 3. Slice the zucchini lengthwise into thin ribbons using a mandolin or vegetable peeler.
- 4. Lightly spray the zucchini with cooking spray and season with salt and pepper.
- 5. Grill the zucchini ribbons on one side for about 1 to 2 minutes until lightly marked and wilted.
- 6. Remove the zucchini and place it on a platter to cool slightly.
- 7. Cut the tomatoes into large chunks and season with salt and pepper.
- 8. Arrange the grilled zucchini and tomatoes on the platter and garnish with parsley sprigs.
