Lemon Ginger Cookies

The lemon glaze

Instructions
- Whisk together the flour, baking soda, ground ginger, allspice, and salt in a medium bowl.
- In a large bowl, beat the softened butter and granulated sugar until creamed, then add the egg, lemon juice, lemon zest, and vanilla extract and mix until combined.
- Add the dry ingredients to the wet ingredients and mix until combined, then fold in 2 tablespoons of chopped crystallized ginger.
- Scoop small sections of dough and roll into balls, dipping the tops into remaining crystallized ginger.
- Chill the dough balls in the refrigerator for at least 1 hour.
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- Arrange the chilled dough balls on the baking sheets and bake for 11-13 minutes until lightly browned.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
- For the glaze, whisk together the glaze ingredients and drizzle over the cooled cookies.
