Lemon Ginger Cookies

Ingredients

The cookie dough

  • 1 and 2/3 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon ground ginger
  • ½ teaspoon ground allspice
  • ¼ teaspoon salt
  • ½ cup unsalted butter
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon pure vanilla extract
  • ¼ cup finely chopped crystallized ginger

The lemon glaze

  • ¾ cup confectioners’ sugar
  • 1 and ½ tablespoons fresh lemon juice

Instructions

  1. Whisk together the flour, baking soda, ground ginger, allspice, and salt in a medium bowl.
  2. In a large bowl, beat the softened butter and granulated sugar until creamed, then add the egg, lemon juice, lemon zest, and vanilla extract and mix until combined.
  3. Add the dry ingredients to the wet ingredients and mix until combined, then fold in 2 tablespoons of chopped crystallized ginger.
  4. Scoop small sections of dough and roll into balls, dipping the tops into remaining crystallized ginger.
  5. Chill the dough balls in the refrigerator for at least 1 hour.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Arrange the chilled dough balls on the baking sheets and bake for 11-13 minutes until lightly browned.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
  9. For the glaze, whisk together the glaze ingredients and drizzle over the cooled cookies.
