Classic Vegan Key Lime Pie

Ingredients

Crust

  • 1 ½ cups heaped graham cracker crumbs
  • 4-5 Tbsp melted vegan butter

Filling

  • ¾ cup raw cashews
  • 1 cup water (plus more for soaking)
  • 1 ¼ cups cane sugar
  • 1 ½ Tbsp key lime zest
  • ¾ cup key lime juice
  • ¼ cup cornstarch
  • 1 pinch sea salt
  • ¼ cup vegan butter
  • ½ tsp vanilla extract

For Serving

  • to taste dairy-free whipped cream
  • to taste key lime zest

Instructions

  1. Soak cashews in hot water for at least 20 minutes, then drain.
  2. Preheat the oven to 350°F (176°C).
  3. Combine graham cracker crumbs and melted vegan butter in a bowl, then press into a pie plate and bake for 10 minutes.
  4. Blend cane sugar and lime zest until the sugar looks green.
  5. Add soaked cashews, water, lime juice, cornstarch, and sea salt to the blender and blend until smooth.
  6. Heat the filling mixture in a saucepan over medium heat until it boils, stirring constantly.
  7. Stir in vegan butter and vanilla extract, then pour the filling into the crust.
  8. Refrigerate for at least 5 hours to set.
  9. Serve with whipped cream and lime zest.
