Classic Vegan Key Lime Pie

Instructions
- Soak cashews in hot water for at least 20 minutes, then drain.
- Preheat the oven to 350°F (176°C).
- Combine graham cracker crumbs and melted vegan butter in a bowl, then press into a pie plate and bake for 10 minutes.
- Blend cane sugar and lime zest until the sugar looks green.
- Add soaked cashews, water, lime juice, cornstarch, and sea salt to the blender and blend until smooth.
- Heat the filling mixture in a saucepan over medium heat until it boils, stirring constantly.
- Stir in vegan butter and vanilla extract, then pour the filling into the crust.
- Refrigerate for at least 5 hours to set.
- Serve with whipped cream and lime zest.
