Instructions
- Preheat the oven to 350 degrees.
- Pulse the vanilla wafers in a food processor until fine crumbs form.
- Drizzle in melted coconut oil and mix until the mixture holds together.
- Press the cookie mixture into mini muffin tin wrappers and bake for 7 minutes.
- Allow the crusts to cool.
- In the food processor, combine vegan cream cheese, lime zest, vanilla, maple syrup, and coconut cream until well mixed.
- Spoon the key lime mixture into the cooled muffin wrappers on top of the crust.
- Freeze for 2-3 hours, then transfer to the fridge until ready to serve.
- Serve chilled with extra grated lime zest.
