Ingredients

The crust

  • 20 pieces Vanilla Wafers
  • 2 tbsp coconut oil, melted

The filling

  • 8 oz Vegan Cream Cheese
  • ¼ cup Fresh Lime Juice
  • 1 piece Lime (zest of 1)
  • 1 tsp Vanilla extract
  • 2 tbsp Canned Coconut Cream
  • ¼ cup Maple Syrup

Instructions

  1. Preheat the oven to 350 degrees.
  2. Pulse the vanilla wafers in a food processor until fine crumbs form.
  3. Drizzle in melted coconut oil and mix until the mixture holds together.
  4. Press the cookie mixture into mini muffin tin wrappers and bake for 7 minutes.
  5. Allow the crusts to cool.
  6. In the food processor, combine vegan cream cheese, lime zest, vanilla, maple syrup, and coconut cream until well mixed.
  7. Spoon the key lime mixture into the cooled muffin wrappers on top of the crust.
  8. Freeze for 2-3 hours, then transfer to the fridge until ready to serve.
  9. Serve chilled with extra grated lime zest.
