Ingredients

The pie

  • ½ cup cashews
  • 1 medium avocado
  • 1 Tbsp agave
  • 1 ½ tsp lime zest
  • 1 medium lime (juice)

The crust

  • 6 dates dates
  • ¼ cup almond flour
  • ¼ cup milk of choice
  • 2 tsp vanilla paste

Instructions

  1. Soak the cashews in warm water for 10-15 minutes until soft.
  2. In a food processor, blend the soaked cashews, avocado, agave, lime zest, and lime juice until smooth.
  3. Pour the mixture into ramekins and smooth the top.
  4. Freeze the filled ramekins for 1-2 hours until hard.
  5. For the crust, blend the dates, almond flour, milk, and vanilla paste until sticky.
  6. Press the crust mixture onto the frozen pie and freeze for another 30 minutes.
  7. Allow the pies to defrost for a few minutes before serving.
