Instructions
- Soak the cashews in warm water for 10-15 minutes until soft.
- In a food processor, blend the soaked cashews, avocado, agave, lime zest, and lime juice until smooth.
- Pour the mixture into ramekins and smooth the top.
- Freeze the filled ramekins for 1-2 hours until hard.
- For the crust, blend the dates, almond flour, milk, and vanilla paste until sticky.
- Press the crust mixture onto the frozen pie and freeze for another 30 minutes.
- Allow the pies to defrost for a few minutes before serving.
