Raw Vegan Key Lime Pie

Ingredients

The pie

  • ½ cup cashews
  • 1 medium avocado
  • 1 Tbsp agave
  • 1 ½ tsp lime zest
  • 1 medium lime (about 1 Tbsp + 1 tsp juice)

The crust

  • 6 dates dates
  • ¼ cup almond flour
  • ¼ cup milk of choice
  • 2 tsp vanilla paste

Instructions

  1. Soak the cashews in warm water for 10-15 minutes until soft.
  2. Drain the cashews and combine them with avocado, agave, lime zest, and lime juice in a food processor or blender. Blend until smooth.
  3. Pour the mixture into ramekins and smooth the top.
  4. Freeze the filled ramekins for 1-2 hours until hard.
  5. For the crust, blend dates, almond flour, milk, and vanilla paste until incorporated but still sticky.
  6. Press the crust mixture onto the frozen pie and return to the freezer for 30 minutes to harden.
  7. Allow the pies to defrost for a few minutes before serving.
