Ingredients

The Meat

  • 1 lb grassfed lean ground beef
  • 1 small onion, chopped
  • 1 clove garlic, chopped
  • 1 large jalapeno pepper, seeded and chopped
  • ½ tsp Himalayan salt
  • ½ tsp freshly ground black pepper
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp ground coriander
  • 1 tsp dried oregano
  • ½ cup bone broth or water
  • 1 medium tomato, chopped

The Zoodles

  • 2 large zucchini, made into strands
  • ¼ tsp Himalayan salt
  • ¼ tsp freshly ground black pepper
  • ¼ tsp garlic powder
  • ½ tsp dried oregano

Instructions

  1. Heat a cast iron skillet over medium-high heat and add the ground beef, salt, and pepper.
  2. Cook the meat until browned and crispy, about 8 minutes.
  3. Add chopped onion, garlic, and jalapeno; cook until softened, about 1 minute.
  4. Add water and spices, cooking until the water evaporates, about 1 minute, then stir in the tomato and remove from heat.
  5. Return the skillet to heat and add spiralized zucchini, seasoning with salt, pepper, and garlic powder; cook for about 30 seconds.
  6. Top the zoodles with the reserved meat mixture and garnish with extra tomatoes and jalapeno.
  7. Serve immediately and enjoy.
