Healthy Zucchini Lasagna

Instructions
- Cook the ground beef with Italian seasoning, salt, and pepper until no longer pink, then set aside.
- Sauté zucchini, mushrooms, onion, and garlic in olive oil until tender.
- Add spinach and basil, cooking for another few minutes.
- Stir in marinara sauce, balsamic vinegar, cooked beef, and half of the mozzarella cheese.
- Dollop cottage cheese on top and simmer uncovered for about 10 minutes.
- Top with remaining mozzarella and Parmesan cheese, cover, and cook until melted.
- Let the lasagna rest for 10 minutes before serving, garnished as desired.
