Healthy Zucchini Lasagna

Ingredients

The meat and seasoning

  • 1 pound ground beef or ground turkey
  • 1 ½ teaspoons Italian seasoning
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper
  • to taste extra-virgin olive oil or avocado oil

The vegetables

  • 2 medium zucchini
  • 2 cups diced mushrooms
  • 1 cup diced yellow onion
  • 4 cloves garlic
  • 2 cups packed fresh spinach
  • ¼ cup fresh basil leaves

The sauce and cheese

  • 1 24-ounce jar marinara sauce
  • 1 tablespoon balsamic vinegar
  • 1 cup shredded mozzarella cheese
  • 1 cup cottage cheese
  • ½ cup shredded Parmesan cheese

Optional garnishes

  • to taste crushed red pepper flakes
  • to taste additional Parmesan
  • to taste roughly chopped fresh basil leaves

Instructions

  1. Cook the ground beef with Italian seasoning, salt, and pepper until no longer pink, then set aside.
  2. Sauté zucchini, mushrooms, onion, and garlic in olive oil until tender.
  3. Add spinach and basil, cooking for another few minutes.
  4. Stir in marinara sauce, balsamic vinegar, cooked beef, and half of the mozzarella cheese.
  5. Dollop cottage cheese on top and simmer uncovered for about 10 minutes.
  6. Top with remaining mozzarella and Parmesan cheese, cover, and cook until melted.
  7. Let the lasagna rest for 10 minutes before serving, garnished as desired.
