Ingredients

The Meatballs

  • 1 lb ground chicken
  • ¼ cup almond flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • tsp black pepper
  • 2 tsp dried parsley

The Sauce

  • 1 8-ounce can crushed pineapple
  • 1 bottle (8.5 ounces) Primal Kitchen Classic BBQ Sauce
  • ¾ cup chicken or turkey broth

Optional Garnish

  • to taste sliced green onions
  • to taste chopped parsley

Instructions

  1. Combine crushed pineapple, BBQ sauce, and broth in a large skillet and bring to a simmer.
  2. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  3. In a bowl, mix ground chicken, almond flour, garlic powder, onion powder, salt, pepper, and parsley.
  4. Shape the mixture into 16 meatballs and place them on the baking sheet.
  5. Bake the meatballs for 12-15 minutes until cooked through.
  6. Add the cooked meatballs to the sauce and stir to coat before garnishing.
