Ingredients

The Meatballs

  • 1 lb ground turkey
  • 1 large egg
  • ¼ cup breadcrumbs
  • 6 Tbsp BBQ sauce, divided
  • ¼ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp salt

The Sides

  • 1 20oz can pineapple slices (in juice)
  • 1 large yellow onion
  • 1 large red bell pepper
  • 1 Tbsp cooking oil
  • tsp salt
  • 2 stalks green onions, sliced
  • 1 cup long grain white rice (uncooked)

Instructions

  1. Preheat the oven to 400ºF.
  2. In a bowl, combine ground turkey, egg, breadcrumbs, 2 Tbsp BBQ sauce, garlic powder, smoked paprika, and salt. Mix until combined.
  3. Shape the mixture into 16 meatballs and place on a parchment-lined baking sheet.
  4. Slice the onion and bell pepper into strips and place on a second baking sheet. Drizzle with cooking oil and season with salt.
  5. Add the pineapple slices to the second half of the baking sheet with the peppers and onions.
  6. Roast both baking sheets in the oven for 15 minutes.
  7. While roasting, cook the rice by combining it with water in a pot and bringing it to a boil. Simmer for 15 minutes, then let it rest.
  8. After 15 minutes, stir the vegetables and brush the pineapple with 2 Tbsp BBQ sauce.
  9. Coat the meatballs with the remaining BBQ sauce and return both sheets to the oven for an additional 10 minutes.
  10. Serve the meatballs, vegetables, and pineapple over the rice, topped with green onions.
