Instructions
- Preheat the oven to 400ºF.
- In a bowl, combine ground turkey, egg, breadcrumbs, 2 Tbsp BBQ sauce, garlic powder, smoked paprika, and salt. Mix until combined.
- Shape the mixture into 16 meatballs and place on a parchment-lined baking sheet.
- Slice the onion and bell pepper into strips and place on a second baking sheet. Drizzle with cooking oil and season with salt.
- Add the pineapple slices to the second half of the baking sheet with the peppers and onions.
- Roast both baking sheets in the oven for 15 minutes.
- While roasting, cook the rice by combining it with water in a pot and bringing it to a boil. Simmer for 15 minutes, then let it rest.
- After 15 minutes, stir the vegetables and brush the pineapple with 2 Tbsp BBQ sauce.
- Coat the meatballs with the remaining BBQ sauce and return both sheets to the oven for an additional 10 minutes.
- Serve the meatballs, vegetables, and pineapple over the rice, topped with green onions.
