Sheet Pan Sweet and Sour Meatballs

Ingredients

Sweet and Sour Sauce

  • ½ cup apple cider vinegar or unseasoned rice vinegar
  • ½ cup BBQ sauce
  • cup lightly packed brown sugar
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dry mustard

Meatballs

  • ¾ to 1 pound lean ground beef or ground turkey
  • ¼ cup breadcrumbs (panko recommended)
  • 2 tablespoons milk
  • 1 tablespoon Worcestershire sauce
  • 1 large egg
  • 1 teaspoon salt (coarse, kosher recommended)
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper (coarse recommended)

Veggies

  • 3 to 4 medium potatoes (peeled and diced small, ¼ inch pieces)
  • 2 to 3 cups broccoli florets
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 400°F and position the oven rack in the middle or lower middle.
  2. In a small saucepan, whisk together all sauce ingredients and simmer for 5-10 minutes, reserving ⅓ cup for basting.
  3. In a medium bowl, combine all meatball ingredients and mix well.
  4. On a sheet pan, spread the diced potatoes in a single layer on one side and place the broccoli florets next to them.
  5. Drizzle the veggies with olive oil and season with salt and pepper, tossing to coat.
  6. Grease the remaining space on the sheet pan, form meatballs, and place them in rows on the pan.
  7. Brush the meatballs with the reserved sauce and bake for 20-25 minutes until cooked through.
  8. Brush the meatballs with more sauce right out of the oven and serve with the remaining sauce.
