Sheet Pan Sweet and Sour Meatballs

Veggies

potatoes (peeled and diced small, ¼ inch pieces)

broccoli florets

Instructions
- Preheat the oven to 400°F and position the oven rack in the middle or lower middle.
- In a small saucepan, whisk together all sauce ingredients and simmer for 5-10 minutes, reserving ⅓ cup for basting.
- In a medium bowl, combine all meatball ingredients and mix well.
- On a sheet pan, spread the diced potatoes in a single layer on one side and place the broccoli florets next to them.
- Drizzle the veggies with olive oil and season with salt and pepper, tossing to coat.
- Grease the remaining space on the sheet pan, form meatballs, and place them in rows on the pan.
- Brush the meatballs with the reserved sauce and bake for 20-25 minutes until cooked through.
- Brush the meatballs with more sauce right out of the oven and serve with the remaining sauce.
