Ingredients

Meatballs

  • 2 lbs ground turkey
  • 2 large eggs
  • 1 cup breadcrumbs
  • ¼ cup finely diced white onion
  • 2 cloves garlic
  • ½ tsp salt
  • ¼ tsp pepper

Sweet and Sour Sauce

  • 1 tbsp arrowroot powder
  • ½ cup pineapple juice
  • ½ cup coconut sugar
  • 2 tbsp soy sauce
  • cup ketchup
  • 1 tsp minced garlic

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix all the meatball ingredients by hand and roll them into balls.
  3. Place the meatballs on the baking sheet, making about 28 meatballs.
  4. Bake for 16-18 minutes or until the internal temperature reaches 165°F.
  5. While the meatballs are baking, heat all the sweet and sour sauce ingredients in a saucepan over medium-high heat.
  6. Let the sauce bubble, then reduce the heat to medium and whisk often, simmering for at least 5 minutes until thickened.
  7. Cover the cooked meatballs with the sweet and sour sauce and serve immediately.
