Instructions
- Preheat the oven to 325°F and prepare an 8x2 inch cake pan with baking spray and parchment.
- Process the walnuts with the sweetener until finely ground.
- Mix all dry ingredients in a bowl, then combine wet ingredients in another bowl and beat with a mixer.
- Combine the wet and dry mixtures until fully incorporated.
- Pour the batter into the prepared cake pan and bake for 30-40 minutes until a toothpick comes out clean.
- Let the cake cool completely in the pan covered with a tea towel.
- Prepare the ganache by microwaving the chocolate, cream, and butter, then whisk until smooth.
- Pour the ganache over the cooled cake and let it set before serving.
