Ingredients

Dry Ingredients

  • 1 ¼ cup almond flour
  • 3 ounces walnuts
  • ½ cup low carb sugar
  • cup coconut flour
  • cup cocoa powder
  • 1 tablespoon baking powder
  • ¼ teaspoon salt

Wet Ingredients

  • 4 large eggs
  • ¼ cup walnut oil
  • 1 teaspoon vanilla
  • 1 teaspoon stevia glycerite
  • ½ cup buttermilk

Chocolate Ganache Glaze

  • 2 oz Ghiradelli Intense Dark Chocolate 86%
  • ¼ cup heavy cream
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 325°F and prepare an 8x2 inch cake pan with baking spray and parchment.
  2. Process walnuts with sweetener until finely ground.
  3. In a medium bowl, mix dry ingredients including ground walnuts.
  4. In another bowl, beat wet ingredients together.
  5. Combine wet and dry ingredients until fully mixed.
  6. Pour the batter into the prepared pan and bake for 30-40 minutes, checking for doneness.
  7. Let the cake cool completely covered with a towel.
  8. For the ganache, microwave chocolate, cream, and butter until melted, then whisk until smooth.
  9. Spread ganache over the cooled cake and decorate with walnut halves if desired.
