Ingredients

The Fried Chicken

  • 2 medium boneless, skinless chicken breasts
  • 1 large egg
  • cup fine almond flour
  • ¼ cup coconut flour
  • 1 tablespoon tapioca starch
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • as needed for frying refined coconut oil or avocado oil

The Salad

  • 8 cups chopped lettuce or mixed greens
  • 2 large hard-boiled eggs
  • ½ cup grape tomatoes
  • ¼ cup chopped pecans
  • ¼ cup thinly sliced red onion
  • to taste Whole30 ranch dressing

Instructions

  1. Prepare the egg wash by beating the egg in a shallow bowl.
  2. In another bowl or bag, mix almond flour, coconut flour, tapioca starch, salt, and garlic powder.
  3. Coat the chicken in the egg wash, then dredge in the flour mixture, ensuring it's well coated.
  4. Heat oil in a skillet over medium heat until hot.
  5. Fry the chicken for about 3 minutes on each side until golden brown and cooked through.
  6. Remove the chicken and let it drain on paper towels.
  7. Assemble the salad by dividing lettuce between bowls and topping with eggs, tomatoes, pecans, and onion.
  8. Slice the chicken and place it on top of the salads, then drizzle with ranch dressing.
