Ingredients

  • ¾ cup freshly brewed espresso or coffee
  • 1 cup canned full-fat coconut milk
  • 2 tablespoons maple syrup
  • teaspoon sea salt

Instructions

  1. Brew the coffee and let it cool to room temperature.
  2. Blend the coffee, coconut milk, sweetener, and salt for 30 seconds, or whisk vigorously for 2 minutes if not using a blender.
  3. Fill the popsicle molds with the coffee mixture.
  4. Freeze the molds until the popsicles are solid, about 4-5 hours.
  5. Remove the popsicles from the mold and enjoy.
