Ingredients

The popsicle base

  • 2 cans coconut milk, full fat
  • 2 teaspoons vanilla extract
  • ½ cup granulated sweetener of choice

Optional toppings

  • 1 cup sugar free chocolate chips
  • ¼ cup peanuts, chopped

Instructions

  1. Combine all ingredients in a small saucepan over low heat and stir until the sweetener dissolves.
  2. Cover the pan and let it sit for two hours to cool.
  3. Whisk the mixture and pour it into 8 popsicle molds, inserting a popsicle stick in each.
  4. Freeze for at least 4 hours or overnight to firm up.
  5. If desired, melt chocolate and dip the popsicles, then place them on a lined baking sheet and freeze until the chocolate is firm.
