Ingredients

The popsicle mixture

  • 1 can full fat coconut milk
  • 1 cup almond milk (or other alt-milk)
  • ¾ cup peanut butter
  • 2 tbsp agave nectar or honey

The chocolate coating

  • 8 ounces dark chocolate, chopped or chips
  • ¼ cup coconut oil

Instructions

  1. Whisk the coconut milk in a large measuring cup until smooth.
  2. Add almond milk until the mixture totals 2.5 cups.
  3. Stir in peanut butter and whisk until smooth.
  4. Add agave nectar or honey to taste.
  5. Pour the mixture into popsicle molds and freeze for at least 5 hours.
  6. To make the chocolate coating, melt dark chocolate and coconut oil together in the microwave or double-boiler.
  7. Remove popsicles from molds and dip in the chocolate mixture.
  8. Place dipped popsicles on a baking sheet lined with wax paper and freeze until the chocolate hardens.
