Peanut Butter and Chocolate Popsicles

The popsicle mixture

The chocolate coating

dark chocolate, chopped or chips

coconut oil
Instructions
- Whisk the coconut milk in a large measuring cup until smooth.
- Add almond milk until the mixture totals 2.5 cups.
- Stir in peanut butter and whisk until smooth.
- Add agave nectar or honey to taste.
- Pour the mixture into popsicle molds and freeze for at least 5 hours.
- To make the chocolate coating, melt dark chocolate and coconut oil together in the microwave or double-boiler.
- Remove popsicles from molds and dip in the chocolate mixture.
- Place dipped popsicles on a baking sheet lined with wax paper and freeze until the chocolate hardens.
