Instructions
- Whisk together 2 tablespoons of almond milk and xanthan gum in a saucepan until it forms a clump.
- Add the remaining almond milk, heavy cream, cocoa powder, salt, and vanilla to the saucepan.
- Heat the mixture over medium-high heat, whisking continuously to break down the xanthan gum clumps.
- Once the mixture boils and thickens, remove it from heat.
- Pour the mixture into a measuring cup for easy transfer to the popsicle molds.
- Fill the molds with the fudge mixture, cover them, and insert popsicle sticks.
- Freeze for at least 6 hours, preferably overnight for harder popsicles.
- Run the molds under hot water to release the popsicles.
