Ingredients

  • 2 tablespoons unsweetened almond milk
  • 1 teaspoon xanthan gum
  • cups unsweetened almond milk
  • 1⅓ cups heavy whipping cream
  • ½ cup unsweetened cocoa powder
  • ½ cup sweetener
  • 2 teaspoons vanilla
  • ¼ teaspoon salt

Instructions

  1. Whisk together 2 tablespoons of almond milk and xanthan gum in a saucepan until it forms a clump.
  2. Add the remaining almond milk, heavy cream, cocoa powder, salt, and vanilla to the saucepan.
  3. Heat the mixture over medium-high heat, whisking continuously to break down the xanthan gum clumps.
  4. Once the mixture boils and thickens, remove it from heat.
  5. Pour the mixture into a measuring cup for easy transfer to the popsicle molds.
  6. Fill the molds with the fudge mixture, cover them, and insert popsicle sticks.
  7. Freeze for at least 6 hours, preferably overnight for harder popsicles.
  8. Run the molds under hot water to release the popsicles.
