Ingredients

  • 1 ¾ cup coconut milk
  • 1 ½ teaspoons vanilla bean paste
  • 3 tablespoons honey
  • ¼ cup fresh raspberries
  • ¼ cup fresh blueberries
  • ¼ cup fresh blackberries

Instructions

  1. Whisk together the coconut milk, vanilla bean paste, and honey in a small bowl.
  2. Distribute the fresh fruit evenly into 8 popsicle molds.
  3. Pour the coconut milk mixture over the berries in each mold until full.
  4. Place the tops on the molds and add popsicle sticks.
  5. Freeze for 4 hours or overnight.
  6. Serve when ready.
