Steamed Mussels

Ingredients

The mussels

  • 4 pounds fresh mussels, cleaned and debearded

The sauce

  • cup butter
  • 1 tablespoon garlic, minced
  • ¼ teaspoon red chili flakes
  • 1 cup white wine
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lemon juice, freshly squeezed
  • ¼ cup chopped parsley or chives
  • as needed none parsley sprigs and lemon wedges for garnish

Instructions

  1. Heat a large pot over medium heat and melt the butter.
  2. Add the minced garlic and red chili flakes, cooking for about 30 seconds while stirring.
  3. Pour in the white wine and bring to a simmer without boiling.
  4. Add the mussels, salt, and pepper to the pot, cover, and simmer for 5-7 minutes until the mussels open.
  5. Discard any mussels that do not open, then stir in the lemon juice and parsley.
  6. Adjust salt to taste and serve immediately, garnished with lemon wedges and parsley sprigs.
