Ingredients

The mussels

  • 2-3 pounds fresh mussels

The seasoning

  • 1 clove garlic, sliced
  • 2 tablespoons fresh basil, chopped
  • 1 pinch crushed red pepper flakes
  • 2 tablespoons olive oil
  • 2 ounces white wine (optional)

Instructions

  1. Rinse the mussels thoroughly and discard any that do not close when tapped.
  2. In a large sauté pan, heat the olive oil and add the sliced garlic.
  3. Once the garlic begins to cook, add the mussels, red pepper flakes, and basil.
  4. Cover the pan and allow the mussels to steam open.
  5. When the mussels have opened, add the wine and cook for an additional 2-3 minutes.
  6. Serve immediately with a loaf of crusty bread.
