Beer Steamed Mussels

Ingredients

The mussels

  • 2½-3 lbs mussels, bearded and scrubbed

The broth

  • 3 tablespoons melted butter or olive oil
  • 3 cloves garlic, minced
  • ¼ onion finely diced
  • 12 oz beer
  • 1 bunch Italian flat-leaf parsley leaves, coarsely chopped
  • to taste salt
  • to serve lemon or lime wedges

Instructions

  1. Rinse the mussels thoroughly and drain the water.
  2. Heat a deep skillet or pot over medium heat and add the melted butter or olive oil.
  3. Sauté the garlic and onion until fragrant, but not browned.
  4. Add the mussels to the skillet and stir to combine with the garlic and onion.
  5. Pour in the beer and cover the skillet for a few minutes until the mussels open.
  6. Stir in the chopped parsley and add salt to taste.
  7. Serve immediately with a squeeze of lemon or lime if desired.
