Dairy-Free Cheeseburger Soup

Instructions
- Heat a large heavy-bottomed pot over low to medium heat.
- Add a tablespoon of fat, the onion, garlic, and ground beef.
- Cook until the meat is no longer pink and the onions are tender, stirring occasionally.
- Add the tomato puree and increase the heat to medium.
- Blend the beef broth, cashews, arrowroot flour, tomato paste, and salt until smooth.
- Pour the puree into the pot and bring to a boil.
- Once boiling, turn off the heat and let it cool for a few minutes.
- Serve with shredded romaine lettuce and chopped green onions.
