Ingredients

The soup

  • 1 each yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 pounds grass-fed ground beef
  • 2 cups tomato puree
  • 2 cups beef broth
  • cups plain cashews
  • 2 teaspoons arrowroot flour
  • ¼ cup tomato paste
  • teaspoons pink salt

For serving

  • to taste none shredded romaine lettuce
  • to taste none chopped green onions

Instructions

  1. Heat a large heavy-bottomed pot over low to medium heat.
  2. Add a tablespoon of fat, the onion, garlic, and ground beef.
  3. Cook until the meat is no longer pink and the onions are tender, stirring occasionally.
  4. Add the tomato puree and increase the heat to medium.
  5. Blend the beef broth, cashews, arrowroot flour, tomato paste, and salt until smooth.
  6. Pour the puree into the pot and bring to a boil.
  7. Once boiling, turn off the heat and let it cool for a few minutes.
  8. Serve with shredded romaine lettuce and chopped green onions.
