Easy Cheeseburger Soup

Ingredients

The base

  • 1.5 lbs yukon gold potatoes, peeled & diced
  • 1 large head cauliflower, broken into florets
  • 6 cups chicken stock

The vegetables

  • 1 small yellow onion, diced
  • 4 stalks celery, diced
  • 4 long carrots, diced

The meat

  • 1 lb ground beef
  • 3 cloves garlic, minced

The seasoning

  • 3 tbsp fresh dill
  • 1 tsp salt
  • ½ tsp pepper

The finishing touches

  • 1 cup shredded cheddar cheese
  • ¼ cup pickle juice
  • 2 tbsp olive oil

Instructions

  1. Combine cauliflower and potatoes in a large pot with 2 cups of chicken stock and heat to medium-high.
  2. Cook for 25-30 minutes until fork tender, then blend to desired consistency and set aside.
  3. In a separate large pot, heat olive oil over medium-high heat and sauté onion, carrots, and celery for 7-8 minutes.
  4. Add ground beef and garlic, cooking until beef is no longer pink.
  5. Stir in dill, salt, and pepper, then add the remaining chicken stock and the blended vegetable mixture.
  6. Reduce heat to medium, stir in cheddar cheese and pickle juice, and let simmer for 10-15 minutes.
  7. Serve with additional cheese, fresh dill, pickles, and bacon if desired.
