Easy Cheeseburger Soup

Instructions
- Combine cauliflower and potatoes in a large pot with 2 cups of chicken stock and heat to medium-high.
- Cook for 25-30 minutes until fork tender, then blend to desired consistency and set aside.
- In a separate large pot, heat olive oil over medium-high heat and sauté onion, carrots, and celery for 7-8 minutes.
- Add ground beef and garlic, cooking until beef is no longer pink.
- Stir in dill, salt, and pepper, then add the remaining chicken stock and the blended vegetable mixture.
- Reduce heat to medium, stir in cheddar cheese and pickle juice, and let simmer for 10-15 minutes.
- Serve with additional cheese, fresh dill, pickles, and bacon if desired.
