Ingredients

The soup

  • 1 pound ground beef
  • ½-1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ tablespoon dried ground mustard
  • to taste salt
  • to taste pepper
  • 1 cup diced onions
  • 3-4 cups diced russet potatoes
  • 3 cups broth
  • 1 teaspoon Worcestershire sauce
  • 1 cup half and half cream
  • 2-3 cups shredded cheddar cheese
  • 2 oz cream cheese

Optional thickener

  • 1 tablespoon water
  • 1 tablespoon all-purpose flour

Instructions

  1. Heat a skillet on medium-high heat.
  2. Cook the ground beef with onions, Italian seasoning, ground mustard, garlic powder, salt, and pepper until the beef is no longer pink.
  3. Drain any excess fat from the beef if necessary.
  4. Add the cooked beef, diced potatoes, broth, and Worcestershire sauce to the slow cooker.
  5. Cook on High for 3-4 hours or on Low for 7-8 hours.
  6. Add half and half, shredded cheddar, and cream cheese to the pot and stir.
  7. Cook on High for an additional 15-20 minutes until the soup thickens and the cheese melts.
  8. To thicken further, create a slurry with water and flour, add it to the pot, and stir until thickened.
