Cheeseburger Soup

Ingredients

  • 1 tablespoon light butter
  • ½ tablespoon light butter
  • 1 hamburger bun with sesame seeds
  • 1 pinch garlic powder
  • 1 pinch salt
  • 1 stalk celery, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ¾ lb 95% lean ground beef
  • 1½ - 2 teaspoons McCormick Hamburger Seasoning
  • cups fat free low sodium beef broth
  • 10.75 oz can of Campbell’s Healthy Request Cheddar Cheese Soup
  • ½ cup fat free half and half
  • ½ cup fat free plain Greek yogurt
  • ¾ cup shredded 2% sharp cheddar cheese

Instructions

  1. Preheat the oven to 325°F.
  2. Cut the hamburger bun into bite-sized cubes and toss in melted butter, garlic powder, and salt.
  3. Bake the bread cubes for 15 minutes until they are crouton-like.
  4. In a large pot, melt the remaining butter over medium heat and sauté the celery and onion for about 4 minutes.
  5. Add the garlic and cook for an additional minute.
  6. Remove the vegetables and add the ground beef to the pot, cooking until browned and breaking it up.
  7. Stir in the hamburger seasoning, then add the vegetables back into the pot.
  8. Pour in the beef broth, cheese soup, half and half, yogurt, and about ½ cup of shredded cheese.
  9. Bring the mixture to a boil, then reduce to a simmer for 20 minutes.
  10. Serve topped with remaining cheese and croutons.
