Ingredients

The soup base

  • 1-2 tbsp ghee
  • 1 lb lean ground beef
  • 1 large onion, chopped
  • 1 rib celery, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground black pepper
  • 1 tsp garlic powder
  • ½ tsp celery seeds

The liquid ingredients

  • 4 cups light chicken stock
  • 2 cups water
  • 1 28oz can diced tomatoes
  • ½ cup chopped dill pickles
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce

The pasta

  • 1 cup dry short pasta of your choice

Optional garnish

  • to taste grated sharp cheddar cheese

Instructions

  1. Melt ghee in a large stockpot over medium-high heat.
  2. Add ground beef and cook until browned, about 7-8 minutes.
  3. Stir in chopped onion, celery, garlic, and spices; cook for about 2 minutes.
  4. Add chicken stock, water, diced tomatoes, dill pickles, Dijon mustard, and Worcestershire sauce; bring to a boil and simmer for 15 minutes.
  5. Stir in pasta and cook until tender, about 8 minutes.
  6. Adjust seasoning and serve immediately, garnished with cheese if desired.
