Cheeseburger Soup

Instructions
- Brown the ground beef in a medium, heavy-bottomed pot over medium heat, seasoning with salt and pepper.
- Remove the beef and set aside. In the same pot, heat ghee and cook the celery, onion, and garlic until the onion is translucent.
- Add the mustards and diced tomato, cooking for another 1-2 minutes.
- Pour in the almond milk and add the chopped lettuce, then return the beef to the pot.
- Bring the mixture to a boil, then reduce to a simmer for 5-10 minutes.
- Blend the cashews with water and nutritional yeast until smooth, then add to the soup.
- Season the soup with salt and pepper, and simmer until thickened. Adjust the consistency with more almond milk if needed.
- Serve topped with fresh parsley and cracked black pepper.
