Cheeseburger Soup

Ingredients

  • 1 stalk celery
  • ½ medium onion onion
  • 1 ½ pounds ground beef or ground bison
  • 2 tablespoons ghee
  • 1 teaspoon minced garlic
  • 1 ½ tablespoons English mustard or yellow mustard
  • 1 tablespoon Creole mustard or whole grain mustard
  • 1 tomato diced tomato
  • 3 cups plain, unsweetened almond milk
  • 1 cup romaine or iceberg lettuce, chopped
  • 1 ½ cups raw cashews
  • 1 ½ cups water
  • ¼ cup nutritional yeast
  • to taste fresh parsley, chopped (for serving)

Instructions

  1. Brown the ground beef in a medium, heavy-bottomed pot over medium heat, seasoning with salt and pepper.
  2. Remove the beef and set aside. In the same pot, heat ghee and cook the celery, onion, and garlic until the onion is translucent.
  3. Add the mustards and diced tomato, cooking for another 1-2 minutes.
  4. Pour in the almond milk and add the chopped lettuce, then return the beef to the pot.
  5. Bring the mixture to a boil, then reduce to a simmer for 5-10 minutes.
  6. Blend the cashews with water and nutritional yeast until smooth, then add to the soup.
  7. Season the soup with salt and pepper, and simmer until thickened. Adjust the consistency with more almond milk if needed.
  8. Serve topped with fresh parsley and cracked black pepper.
