Ingredients

The soup

  • 1 pound ground beef
  • 1 cup diced onions
  • 2 tablespoons unsalted butter
  • 3 cups chopped, fresh cauliflower
  • 3 cups chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 tablespoon dried, ground mustard
  • 1 cup heavy cream
  • 2-3 cups shredded cheddar cheese
  • 2 ounces cream cheese
  • ½ teaspoon xanthan gum

Toppings (optional)

  • to taste cooked bacon
  • to taste diced tomatoes
  • to taste chopped pickles

Instructions

  1. Brown the ground beef in a large pot with salt and pepper, then drain the fat.
  2. Sauté onions in butter until translucent.
  3. Add chicken broth, cauliflower, Worcestershire sauce, garlic powder, Italian seasoning, and dried mustard; stir and cover.
  4. Simmer for 15 minutes until cauliflower is soft.
  5. Uncover and add the cooked beef, heavy cream, cream cheese, and shredded cheese; stir well.
  6. For a thicker soup, mix xanthan gum with some soup in a bowl until smooth, then stir back into the pot.
