Ingredients

The meat

  • 2–3 lbs. bone-in beef short ribs

The sauce

  • 1 tablespoon coconut oil
  • 15 oz. can of tomato sauce
  • ½ cup balsamic vinegar
  • 4 whole dried dates
  • 6 cloves garlic

The seasoning blend

  • 2 tablespoons coarse sea salt
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried sage
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon black pepper

Instructions

  1. Mix the spice blend ingredients in a small bowl.
  2. Pat the short ribs dry and rub the spice blend on both sides.
  3. Heat a skillet over medium-high heat, add coconut oil, and sear the short ribs for 2-3 minutes on each side until browned.
  4. Place the seared short ribs in the slow cooker and add the tomato sauce, balsamic vinegar, dried dates, and smashed garlic cloves.
  5. Cook on low for 4-6 hours or until the beef is tender.
  6. Serve with your choice of side dishes.
