Ingredients

The seasoning

  • 2 teaspoons garlic powder
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried oregano
  • 2 teaspoons sea salt
  • ½ teaspoon dried mustard

The main ingredients

  • 3 pounds bone-in beef short ribs
  • 2 tablespoons avocado oil
  • 1 onion diced
  • 2 carrots diced
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 tablespoon balsamic vinegar

Instructions

  1. Combine garlic powder, rosemary, oregano, salt, and mustard in a small bowl to make the seasoning blend.
  2. Pat the beef ribs dry and sprinkle the seasoning mix on all sides. Refrigerate overnight if desired.
  3. Heat oil in a large skillet over medium-high heat and sear the seasoned ribs for 1 minute on each side.
  4. Transfer the seared ribs to the slow cooker.
  5. In the same skillet, add diced onion and carrots, cooking for 6 minutes.
  6. Stir in tomato paste and cook for 1 minute before mixing it with the vegetables.
  7. Add the vegetable mixture to the slow cooker, then pour in beef broth and balsamic vinegar.
  8. Cook on low for 8 hours.
