Roasted Bell Peppers
Instructions
- 1. Preheat the broiler to high.
- 2. Wash the peppers by rinsing them under water.
- 3. Seed and slice the peppers, then place them on a baking sheet.
- 4. Broil the peppers for 8-10 minutes until at least 50% of the skin is blackened.
- 5. Remove from the oven and place in a brown paper bag to steam for at least 5 minutes.
- 6. Once cool enough to handle, peel off as much of the skin as you can and discard it.
- 7. Freeze the roasted bell pepper slices on a baking sheet, then transfer to a ziplock bag or freezer-proof container.
