Herbed Cucumber and Feta Salad

Ingredients

  • 2 cups cucumber, such as English or Persian cucumbers, halved then sliced into rounds
  • ½ cup chopped red onion
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • ½ cup chopped fresh mint
  • ½ cup chopped fresh dill
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 6 ounces feta cheese, crumbled

Instructions

  1. Chop the cucumber and red onion, and add them to a large mixing bowl.
  2. Drizzle the olive oil and lemon juice over the cucumber and onion, then toss to coat.
  3. Add the chopped mint, dill, kosher salt, and black pepper, and toss again.
  4. Top with crumbled feta cheese and adjust seasoning if necessary.
  5. Serve the salad chilled, preferably on the same day it's made.
