Tomato Sandwich

Ingredients

  • 2 to 3 pieces heirloom tomatoes
  • 1 tablespoon good-quality mayonnaise
  • 1 loaf white bread
  • a pinch none kosher salt
  • to taste none freshly ground pepper

Instructions

  1. Slice the tomatoes to about ΒΌ-inch thick and arrange them on paper towels.
  2. Sprinkle the tomatoes with salt on both sides and let them sit for 5 to 7 minutes to drain.
  3. Spread mayonnaise on both sides of the slices of bread.
  4. Layer the salted tomatoes on one slice of bread and add freshly ground pepper.
  5. Top with another slice of bread, cut in half, and repeat with the remaining ingredients.
