Ingredients

White Bean Puree

  • 1 ½ cups cooked cannellini beans, drained and rinsed
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic
  • 3 tablespoons lemon juice
  • 1 teaspoon capers
  • to taste sea salt and freshly ground black pepper

Sandwich Assembly

  • 8 slices toasted WFM Seeduction® bread
  • 4 leaves butter lettuce
  • 3 slices heirloom tomatoes
  • 2 slices avocados
  • to taste sea salt and freshly ground black pepper
  • 8 leaves fresh basil
  • a pinch smoked paprika (optional)
  • a sprinkle hemp seeds (optional)

Instructions

  1. Blend the cannellini beans, olive oil, garlic, lemon juice, and capers until smooth, then season with salt and pepper.
  2. Chill the white bean puree until ready to use.
  3. Assemble the sandwiches using toasted bread, spreading the white bean puree, and adding lettuce, tomatoes, avocado, basil, salt, pepper, smoked paprika, and hemp seeds.
