Ingredients

The base

  • 2 cups heavy cream
  • 2 cups whole milk
  • ¾ cup granulated sugar
  • 2 tablespoons instant coffee granules
  • 6 egg yolks

For serving

  • chocolate powder, for dusting

Instructions

  1. Combine the cream, milk, sugar, and coffee in a saucepan and bring to a gentle boil.
  2. Beat the egg yolks in a bowl and whisk in 1 cup of the hot cream mixture.
  3. Gradually add the egg mixture to the hot cream, cooking over medium-low heat until thickened.
  4. Strain the mixture into a clean container, cover, and chill in the refrigerator for 2 hours.
  5. Pour the chilled mixture into an ice cream machine and freeze according to the manufacturer's instructions.
  6. Transfer the ice cream to an airtight container and freeze until ready to serve.
  7. Dust with cocoa powder before serving.
