Fiery Pineapple-Jalapeño Salsa

Instructions
- Prepare the salsa by combining pineapple, mango, jalapeno, red chili, cilantro, lime juice, and salt. Mix well and refrigerate.
- Preheat the oven to 400°F and set a wire rack inside a baking sheet.
- In a bowl, toss the wings with coconut oil and a pinch of salt. Arrange them in a single layer on the rack.
- Bake the wings for 45-50 minutes until cooked through and crispy.
- While the wings bake, prepare the sauce by whisking together coconut milk, peanut butter, sweet thai chili sauce, soy sauce, lime juice, ginger, brown sugar, and lemongrass until smooth.
- Once the wings are baked, toss half of them in the peanut sauce and place them back on the rack.
- Repeat with the remaining wings and bake for an additional 5-10 minutes until the glaze is glossy.
- Garnish the wings with cilantro and peanuts, and serve with the salsa.
